Sweet-raisin wines

Sweet wines are often characterized by their high sugar content and their intense, unmistakable flavor. There are different types and different methods for obtaining a passito wine and each one is linked to the tradition of the area, the climate and the type of grape. So-called sweet wines are produced by stopping alcoholic fermentation before the residual sugar is completely used up by the yeasts. In dessert wines, to ensure that the grapes concentrate their sugar content by losing water, different methods of drying the grapes are used, which can take place on the plant, leaving the bunches beyond normal ripening (this is what we mean by late harvest), or on racks in fruit lofts, as occurs for Recioto della Valpolicella or hung vertically in ventilated rooms for Recioto di Gambellara.
