Vinification: Very low yields (80q.li hectare) through bud selection in spring and plant thinning in August
During the harvest, all the grapes are selected and harvested by hand for a 40/50 day drying process
Ageing: in barriques for 24 months, 30% new, then aging in the bottle for at least one year
