Vinification: The grapes are harvested by hand and placed in crates. It is pressed whole with a free-run juice yield of 50%. After soft pressing, the must ferments at a controlled temperature and becomes foamy in the following spring

Refinement: Aged in the bottle on the lees for about 24 months before disgorgement
