Vinification: The grapes are harvested by hand and placed in crates. It is pressed whole with a free-run juice yield of 50%. After soft pressing, the must is decanted cold for 12-24 hours. It then ferments at a controlled temperature of around 16°C. At the end of winter, the second fermentation takes place

Aging: Aged in the bottle on the lees for about 36 months before disgorgement
