The Cuvée Ginevra sparkling wine has a refined and solid essence.
It can accompany both delicately flavoured and more structured dishes.
It is made entirely from Garganega grapes , selected directly on the vine during the crate harvest. As per the traditional Metodo Classico process, the Cuvée is the result of two fermentations, first in the tank and then in the bottle.
During the forty months of maturation that follow, it evolves and matures thanks to yeast lysis, releasing aromas resulting from cell breakdown. This is the nature of its complex and robust character.

Winemaking: the The grapes are harvested in crates between the end of August and the first ten days of September. The bunches are gently and progressively pressed, with the fractionation of the must and alcoholic fermentation in steel tanks at a controlled temperature.
Aging: Batonnage until the base is ready in the spring following the harvest, followed by a second fermentation in the bottle. The wine then ages in stacks for at least 40 months, where it evolves and matures thanks to the lysis of the yeasts.
