Format: 75 cl bottle

Vinification: The grapes are collected in crates and cooled in cold rooms at 5°. The pressing is performed in the absence of oxygen with the use of nitrogen and antioxidants. After a short skin maceration of about 6 hours, a soft pressing begins. At the end of the cold decantation, the clarified must is fermented at a controlled temperature of about 13° for 12/15 days and stored with the fine lees for 3-4 months. No aging in barriques and malolactic fermentation

Olfactory analysis: The scent is aromatic with sensations of lychee, grapefruit and passion fruit
Taste analysis: The flavor is long, with an acidic note that gives it freshness and recalls the varietal notes perceived on the nose. The aftertaste is complex and persistent
How to serve it: Serving temperature 8°-10°C
How to taste it: Serve in a medium open goblet
Pairings: Excellent as an aperitif, it goes very well with asparagus, all lean appetizers, soups, risottos and fish-based dishes
