PIWI grape varieties are resistant, requiring no pesticide treatment. ' La Chioccia del Canever ' is a still, fruity, and elegant red wine made from the PIWI Pinot Kors and Volturnis grape varieties, both descendants of Pinot Noir.

Vinification: Manual harvest with selection of the finest bunches at the end of September, with slight overripeness. Fermentation with maceration on the skins for 10 days.
Aging: Aged in steel on fine lees for 6 months with batonnage every two days.
Aged in cement for 6 months.
