Winemaking: The grapes are harvested manually in small boxes. Soft pressing is carried out with subsequent cold stabilization of the must for 24-36 hours. Alcoholic fermentation takes place at a controlled temperature of 17°-18°C. Second fermentation in autoclave for at least 3 months

Color: Straw yellow with greenish reflections
Olfactory analysis: The perlage is fine and the foam is persistent. It has a pleasant floral scent with notes of acacia flowers and white pulp fruit.
Taste analysis: The flavor is striking for its roundness and harmony accompanied by a pleasant and progressive carbonic development.
How to serve it: Serving temperature 6°-8°C

Pairings: Excellent as an aperitif, it is enhanced with starters and in particular goes well with all fish-based dishes
