Corte Cavedini's Valpolicella Ripasso is obtained with the ancient "ripasso" technique where the young Valpolicella vinified in October is passed over on the Amarone pomace.

Enveloping with hints of ripe red fruit and cherry, ruby ​​red in colour, it goes well with important first courses, grilled meats, game and medium-aged cheeses

Vineyards: 20-25 years old, Guyot training system, planting density 4500 vines/ha with a yield of 70 quintals/ha

Vinification: at a controlled temperature for about 4 days, where the young Valpolicella vinified in October is passed over the Amarone pomace

Refinement: in French oak tonneaux for 18 months
