Vinification: Manual harvest. Fermentation at controlled temperature in steel containers with selected yeasts. Aging with the Martinotti method for 90 days on the lees

Color:  Light straw yellow, fine and persistent perlage
Olfactory analysis:  The nose exhibits mineral notes flanked by balsamic sensations, and nuances reminiscent of ripe hay
Taste analysis:  On the palate it is soft, silky, with very fine bubbles and a good balance between acidic and sapid components
How to serve it: Serving temperature 6°- 8°C
How to taste it:  Serve it in a large goblet
Pairings:  Excellent aperitif, excellent combined with fish appetizers or delicate cold cuts, fish or white meat dishes, slightly aged cheeses


The cellar 'Corte Capitelli' it rises in a large natural amphitheater set in the Vicenza Pre-Alps.
