In the production of Corte Canella's Amarone della Valpolicella the priority is to preserve the great power that these grapes can offer. Withering for 70/90 days, slow fermentation (about 15 days) at a controlled temperature.

After 36 months of rest in 50% new barriques and two years in the bottle to complete its maturation, this Amarone is ready to be tasted or to rest for a long time in your cellars.

Vinification: The harvest is done by hand, in plateaus with subsequent drying for about 90 days. Careful processing in the cellar leads the wine to age in oak barrels for about 36 months, followed by aging in the bottle for about 1 year. A lot of passion and no rush, to get the most out of it

Olfactory analysis: On the nose, hints of raisined and preserved fruit prevail, such as black cherries and morello cherries. Aromatic structure of unparalleled finesse and complexity.
Taste Analysis: The alcoholic note is well supported by an elegant and balanced structure. The tannin is pleasant and harmonious. The notes of licorice and chocolate are the most present, accompanied by a never intrusive wood. Dense finish with a long persistence.
