Opera Noir is a Trento DOC Rosé produced from the vinification of the sparsest bunches of Pinot Noir, coming from vineyards located over 500 meters above sea level

Grapes: 100% Pinot Noir

Alcohol content: 12.5%

Format: 75 cl bottle

Vinification: Manual harvesting of the grapes, soft pressing, fermentation at controlled temperature in stainless steel tanks

Refinement: After the tirage , it refines in contact with the lees for over 60 months

Allergens: Contains sulfites

Color; Pink, soft and elegant
Olfactory analysis: The intense and at the same time elegant scent, strongly reminiscent of the fragrant scent of dog rose, with fruity hints of wild strawberry, currant and blackberry
Taste analysis: The taste is fresh, clean, with a marked mineral note typical of the porphyritic soils from which it comes. The finish is long, harmonious, rightly sweet, with aromas of dried figs and rhododendron honey
How to serve it: Serving temperature 8°-10*C
How to taste it: Serve in a large flute
Pairings: Excellent with fish tartare, fish and shellfish dishes, fresh cheeses, cold cuts and cured meats

Producer: The Cembra Valley, a bold landscape of terraced vineyards overlooking the Avisio stream, is known and recognized for its vocation for the production of Trento DOC base wines: here, Chardonnay and Pinot Noir have found particular climatic adaptability over time .

Opera stands on the foundations of the historic Napoleone Rossi winery, the oldest in the valley, and is the result of an impressive architectural recovery and expansion project: a jewel set among the daring terraced vineyards that distinguish this marvelous area of Trentino.
